Ingredients

  • 30 ml olive oil
  • 1 medium onion
  • 1 leek leek light green and white part cut into half moons
  • 4 large cloves garlic
  • 3 medium carrots
  • 3 stalks celery thinly sliced on a diagonal
  • 2 pieces ginger root 4-inch pieces, smashed
  • 3 g kosher salt
  • 1.75 l chicken broth
  • 450 g cooked shredded chicken
  • 285 g baby bok choy chopped
  • 30 ml coconut aminos
  • 10 ml sesame oil
  • 1 lime lime juice

Equipment

  • Large pot For sautéing and simmering the soup.
  • Wooden spoon For stirring without damaging the pot.
  • Knife and cutting board Essential for chopping vegetables and ginger.
  • Measuring cups and spoons To ensure accurate ingredient amounts.

Method

Preparation
  1. Clean and trim the ginger, then smash it until the flesh begins to crack. This releases essential oils that enhance the soup's flavor.
  2. In a large pot over medium heat, heat the olive oil. Add the diced onion, carrots, celery, garlic, and smashed ginger. Sauté for 12-14 minutes until the vegetables caramelize and the onion is translucent. Be careful not to burn the aromatics, as this can affect the flavor.
Cooking
  1. Add the chicken broth to the pot and bring to a gentle simmer. Allow it to simmer for about 15 minutes, allowing the flavors from the vegetables and ginger to infuse the broth.
  2. Incorporate the shredded chicken, chopped bok choy, coconut aminos, sesame oil, and lime juice. Cook for an additional 3-5 minutes until the bok choy is tender but not overcooked. This balances the flavors and warms the soup through.

Notes

Garnish with chopped green onions, a drizzle of chili oil, and cilantro for added flavor. Store in an airtight container in the refrigerator for up to four days.
